- Beautiful dark wood long simple handle. No tsuba but the handle is long so it is not needed. Fantastic value considering the length of the blade; 270mm. I bought it for cutting melons and pumpkins. I think it is for slicing through large fillet's of fish; raw or smoked, for sure it will do that well. Simple pure traditional Japan steel (Yasagi silver) blade with but western handle. Do not let the light weight fool you; this is powerful sharp knife, so use it with care and concentration, be careful with the sharp point in particular. Excellent price for introduction to Japan knives. But for general domestic cooking the Gyuto 210mm is just fine to handle everything including large vegetables and melons. But this an elegant beauty you will not find in Europe. Second from left in photos below.
- 包丁もシャープナーも良品でした．特に包丁は切れる切れる．ダマスカスの模様もテンションが上がるぐらい，美しいです．これまで海外の料理包丁を使用していましたが，やはり包丁は日本製ですね．
- 怖いくらい良く切れます。刃の波波模様が日本刀の様にとても綺麗です。持ち手は三角形になってて握り易くお気に入りになりました。唯 切り方が下手なのか切ったきゅうりとかが刃にくっつくのを剥がすのが、ちょっと面倒かな。
